Brinjal Coconut Curry / Vankaya Kobbari Curry

Ingredients :-


Oil - 1 big spn
Chopped Brinjal - 1/2 kg
Chopped Coconut - 1/4 shell
Chopped Ginger - 20g
Chillys - 7
Chopped Onions - 2
Salt - 1,1/2 tbspn (to taste)
Green peas - 15g
Coriander - 1/4 bunch,
Curry leaves - 2 stems


For Seasoning ( Talimpu ) :-

Oil - 2 big spns
Turmeric - 1/2 tbspn
Jeera - 1/2 tbspn
Mustard seeds (aavalu) - 1/2 tbspn
Minapappu (urad dal) - 1/2 tbspn
Dried Chilly - 2
Hing - pinch
Curry leaves
